AVO TOAST: 5 WAYS

Avocado toast is my go-to breakfast. On top of being super fast to make, it is super customizable and very tasty. I always try to find different ways to spruce it up with different ingredients just to get out of the avocado, salt, toast routine. Although there are millions of ways to really personalize it to your taste, I wanted to share with you my five go-to recipes that are perfect for breakfast, lunch or even just as a snack.


Quick note: I’ve recently discovered sourdough rye crispbread and I’m obsessed with it so most of the ingredients in this article are spread on this or plain white bread. You can really make these recipes your own by switching them with your favorite bread, cracker or even a bagel!


PLAIN + BALSAMIC


This is one of my favorites for when I’m in a rush in the morning and only have time for a quick breakfast. Start a toast (or two depending on your hunger), slice up an avocado, top with a little bit of balsamic vinegar and you’re good to go! An alternative to this if you’re not a fan of balsamic vinegar is to just top it off with a little bit of salt and lemon juice. It’s just as quick and tasty.


GOAT CHEESE + FLAX SEED


I looooooove goat cheese. It’s super creamy and the taste pairs perfectly with avocado. Just mash up the avocado with a little bit of salt, onion powder and pepper before spreading it on the toast. Then, you top it off with crumbles of goat cheese and a handful of flax seed. You can definitely swap out the flax seed for sunflower or sesame but I just personally like the taste and crunch of it.


OLIVE TAPENADE


This one is more of a snack/lunch as it is a little bit saltier and more of a savory type of toast. Cut out the avocado in thick chunks and mix it in with some black olive tapenade (you can make your own but I just use store bought because it’s just so much simpler). I usually spread this out on either the crispbread or you could use some smaller crackers and make it an amuse-bouche for your guests at dinner parties.


POACHED EGG + SRIRACHA


Eggs on toast with avocado is a classic. Whether you like your eggs scrambled, fried or over-hard, you can truly make this your own. I recently learned how to poach an egg (thanks youtube!) so when I’ve got a little bit more time in the morning I like to treat myself to one. Mash up an avocado on top of a piece of toast, put your egg on top and cover it with a little (or a lot) of sriracha to taste. If you don’t like spicy, you could always top it off with balsamic or just leave it plain!


CUCUMBER + FETA


It’s like a greek salad but on a piece of toast. I love using the mandoline to make long thin slices of cucumbers because they’re light and aesthetically pleasing. This one is super simple to do, cut up the avocado in long thin slices, top off with the thin layers of cucumbers (or you could just cube them up if you don’t have a mandoline) and crumble up some feta. I personally add a little bit of pepper on top of it all just for taste but it’s totally up to you.
