The perfect fall salad.

Fall is slowly coming around and one of my favourite things about fall is the colours that start to bloom around the city. Leaves turn orange and red, the weather gets a little more gloomy and people take out their deep coloured sweaters.

One of my favourite things to eat when the weather gets cold and I just wanna stay home and curl up on the couch is sweet potato. Whether it’s just sweet potato cubes with a little bit of sour cream or crips sweet potato fries, I find the taste and the deep orange skin comforting. I came up with an easy sweet potato greek salad that you can whip up in minutes and enjoy at home or on the go. This recipe can be easily adapted to your taste by adding or removing certain ingredients (tomatoes, olives, etc.) but these are just the bones.

Before assembling all the ingredients, I suggest putting your sweet potato in the oven as it can take a little bit of time to cook. I personally like to eat this salad cold so I cook two or three sweet potatoes in advance and leave it in the fridge so I can grab it and go if I’m in a rush. If you’re pressed for time and want to eat it hot, you can also cook it in the microwave for about 8-10 minutes just make sure you pierce the skin with a fork a couple of times as to let the juices evaporate. While it’s cooking, you can start getting the rest of the ingredients ready.

For this specific salad, I used cucumbers cut into small cubes as well as crumbled up feta. As mentioned above, it’s easy to add or remove items to this recipe to really make it your own. Once that was all cut up, I also took the sweet potato cubes which had been precut and put them in a bowl with the rest of the ingredients.

For the vinaigrette, I used a pre-made greek dressing that consists of olive oil, vinegar and various spices. It's store-bought but could easily be replaced by any just olive oil and balsamic or a homemade dressing of your choice.
